Who doesn’t love potatoes? Let me see hands! I sure do! And this recipe is probably one of my favorites! Simple yet delicious, filling and hearty! Crunchy potatoes, combined with curry and spices and a simple soy yogurt sauce which you will absolutely love! The perfect side for your bean patties or seitan steak! Delicious and Super Easy Baked Potatoes with Curry

Ingredients
- The potatoes
4 – 5 potatoes
4 tbsp sesame oil
1 tsp salt
1 tbsp curry powder
1 tsp garlic powder
1 tsp onion powder
1 tsp sweet paprika powder
Black pepper
1/3 cup bread crumbs
- The sauce
75 gr soy yogurt
75 gr vegan mayonnaise
1 tsp curry powder
1 garlic clove minced
1/2 tsp salt
Directions
- The potatoes
- Peel the potatoes, wash them and cut them in wedges. Fold them in a kitchen towl and pat dry them. Leave them in the towel for about 30 minutes. Preheat oven at 200°C.
- In a bowl add the potatoes, the spices, the bread crubs and mix well. Line a baking tray with parchment paper. Add the the potatoes in your tray and bake for about 55 minutes or until crispy and golden
- The sauce
- Add all the ingredients in a bowl and stir to combine.
Notes
- You can also chop an oion and add it with your potatoes.
